Hi and thanks for stopping by my blog. Happy new month! I cant believe we are already in the second half of the year. Today, I am sharing a quick and healthy recipe that would be perfect for your next summer event. Independence day here in the United States is a few days away and grilling will be on the top list of most Americans. I found this recipe online last summer and tried it last summer. It was a big hit and is now part of my menu during bbqs. The best part of this recipe is that you don’t have to be a pro to make a beautiful Watermelon cake and yes it is a healthier and might I add pretty looking dessert. Skip the high sugar, high calorie desserts and opt for this refreshing dessert option that everyone will love.
Time: 45 minutes
Ingredients:
1 large watermelon
1 can of whipped cream ( I use cool whip)
1/2 cup of almond flakes
15 fresh strawberries
1/4 cup of fresh blueberries (use your favorite fruits)
1 flat plate
Directions
Skin the watermelon. Cut a straight line on the two ends of the watermelon to create a flat surface. Lay flat on your flatware and begin to shave the sides of the water melon until it looks like a tall cake. (This is the trickiest part of the process and it will take you the longest time, be careful not to over trim.)
Use a paper towel to wipe the sides of the watermelon, to remove excess water from the trimming. Shake your cool whip and begin to apply all around your watermelon. (It sticks on to it easily) Use a spatula to even the whipped cream all around your watermelon. It doesn’t have to be perfect, the fruits and almonds will cover the imperfections. Use your hands to apply the almond flakes to the bottom half of your watermelon cake. Top it up as you please with your favorite fruits.
Keep in the fridge for an hour to chill and serve.
