Hi everyone, I know its been forever and I apologize. I have been super busy and I haven’t had the time to sit on the computer for a long period of time. Between vacation, weddings and the whole family visiting, there has been so little time. I have had a wedding back to back in the last month too, so you can imagine. I haven’t baked in a few weeks but can’t wait to try new treats. This was my first try baking Thumb print cookie and I have to say they are one of my favorite type of cookies now. They are light and I love the option to use any type of filling to make them taste even yummier. The best part also is that they are easy and fast to make.
Ingredients:
1/2 cup butter
1/4 cup brown sugar
1 egg, separated
1/2 tbsp. vanilla
1 cup flour
Jelly or preserve (any flavor)
Line your baking sheet with parchment paper
Place your butter in mixing bowl
Add brown sugar
Add egg yoke
Add your vanilla extract
Using your hand mixer, mix until smooth
Add salt
Flour
Mix all your ingredients for another 2minutes or until smooth
Using a teaspoon( to ensure same shape of cookie) scoop the mix
Roll the mix into a smooth ball like the image below
Whisk your separated egg white
Cover your dough ball in egg white
Place on the baking sheet leaving about 1/2 inch between each dough ball
Use your thumb to make an imprint on the dough
Add your fill in, here I used strawberry jam which can be substituted for any other type of jam or preserve
1/2 a teaspoon of jam filled the whole i created with my thumb

This is what happened to the rest of the jam, my son had a blast eating it, lol
Bake in the oven at 3… for minutes
Allow to cool on a baking rack for about5-10minutes and voila! They are perfect for light snack.
