Hi everyone, hope your week has been going great? Mine’s been great and the weather in Atlanta has been awesome. Its been as high as 80 degrees plus sometimes, I just hope the summer isn’t too hot. In the spirit of spring I decided to bake something light and yummy. I thought about lemon bars because they are yellow like the wonderful sun (I just called the sun wonderful thanks to Barney, lol blame my toddler) and summer in general. I love that they are sweet but also tart at the same time. They are great on the eyes too and perfect dessert at a barbecue. Can’t wait for Memorial Day weekend. My best part of a lemon bar is the shortbread crumb layer especially warm out of the oven. I found this recipe online but made some slight changes.
1.5 cups all-purpose flour
2/3 cup confectioner’s sugar
3/4 cup butter, softened
6 tablespoons all-purpose flour
1/2 cup lemon juice
1.5 cup confectioner’s sugar
3 drops of yellow food coloring
Preheat oven to 350 degrees, using a mixer, cream your butter in a bowl. Add your confectioner’s sugar and mix until completely smooth. Add the flour in. The mix will look like small balls. Grease a 9×13 pan and spread your mix. Use your hands to press firmly into your pan. Ensure that there are no gaps or spaces, the mix should fill the pan completely. Bake for 20 minutes. While your base is baking in the oven, break your eggs and whisk together. In a bowl using your mixer, combine all your filling ingredients together. Its should be a nice liquid yellow color. Once your crust is baked and has cooled down completely, pour your filling and bake for 15minutes. Bring out of the oven and put on a wire rack to cool down.
