Ankara for Winter

Hi and thanks for stopping by my blog! Hope you are having a great start to the week? Keeping with my promise of weekly posts, I am sharing a few pictures from my outfit to church yesterday. I decided to rework one of my old favorites from a few years ago. I love Ankara! there is just something about the variety of vibrant colors and patterns it comes in, that simply makes me happy. It also reminds me of home:) I am African after all, so I have a ton of Ankara outfits in my closet.

I was roaming through my closet trying to figure out what to wear yesterday when I found these two pieces which came as separates (the blouse came with a skirt), but I decided to pair them together. Ankara isn't exactly winter friendly but I found a way to work the look while staying warm. It is so cold here in Atlanta, so I added a basic black 3/4 sleeve top to stay toasty.

I decided to take pictures with both my black and nude pumps because I loved both looks :)  I borrowed my hubby's coat, which just paired perfectly with the outfit. (Yes I dig through his stuff once in a while, lol) What do you think of the look? Which shoes would you have paired the outfit with? Do you ever wear ankara in the winter?

Fluffy goodness, Waffle recipe

One of my all time favorite breakfast food is waffles! I am a huge waffle lover and once in a while I go to my favorite waffle spot, Waffle House. I think they make one of the best waffles period! I have so many amazing Waffle House stories. Here is one, before I was supposed to check-in to the hospital to have my son, I made my husband take me on a trip there to enjoy their yummy waffles before I went into labor, LOL. Glad I did, because I wasn't allowed to eat any meal for the next 12 hours!

So you know, I have been on a quest for the fluffiest waffle recipe for a while now. I had this nice recipe for years, but not until recently did I think it was amazing enough to blog about. My husband actually made the recipe better when he accidentally added an extra ingredient to my recipe, lol. I use a mix of wheat and white flour for a healthier waffle, you definitely don't have to do this and can even try other kinds of flour like almond. I hope you try it out one day and let me know what you think.

This recipe makes about 6-7 waffles on my waffle maker.

1 cup whole wheat flour
1 cup white flour
1 tablespoon sugar
1/4 teaspoon salt
4 teaspoon baking powder
3 cups of milk (I use soy)
1 stick and 1 tablespoon of unsalted butter
2 egg whites beaten to a peak
Hand mixer or you can use your hands, it will just take a longer time

Place your dry ingredients (flours, sugar, baking powder and salt) in a medium to large size bowl. Place your butter in a bowl and melt for 30 seconds. Add the melted butter, and milk to the flour mix. Using your hand mixer, mix them all together. Break eggs, separating the whites and mix until it forms a nice white foamy peak. Using a spatula, add the egg whites into the mix and stir until well blended. That's it! Takes me about 20 minutes or less to make these yummy goodness:)  Spray your waffle maker and add the mix in, following the waffle maker's instructions. You can keep the mix for up to 3 days, just make sure you cover it and place it in the refrigerator. It is so good, I even skip using syrup sometimes:)

Fun facts:
The calorie count for each waffle is 370 calorie and just one is so filling! Add some fruits, veggies or eggs and sausage meat and you have a well balanced breakfast. Make it a super breakfast by adding chai seeds and blueberries before putting it in the mixer, its amazing trust me:)

Happy New Year

Happy New Year and thanks for stopping by my blog. I am so excited about the New Year and the plans God has for everyone! This year I have decided to change my approach to blogging and just make it more personal and organic and just be me! I am not quite sure how that will affect the structure of the blog but one thing for sure is consistency. I am making that promise, so help me God.
To kick off the new direction of my blog, I am sharing a few pictures from my birthday celebration. I turned 33 on December 26. (Yes December babies rock LOL) To celebrate the start of a new year, and Christmas, I went on a vacation to Puerto Vallarta, Mexico with my family. It is an amazing city with beautiful beaches, great culture and the food was just sooo good!! I will be blogging about my travels this year.
I still can't believe I am 33!! I feel so old, LOL. I am so thankful to be alive and in good health. I had  huge plans for a birthday party (there is something so cool about that number, don't you agree?) but all the planning was in my head, and you know how that goes sometimes.
I can say this though, I am loving 33 and embracing all that comes with it, including my first grey hair!! argghh! I spent the day with my loves and it will go on record as my best birthday yet. My amazing husband outdid himself this year.
I really wanted to wear white for my birthday but I didn't want yet another white dress. I fell in love with this silk romper at first sight. It was perfect for the warm Puerto Vallarta weather. I paired it with my new fav shoes and minimal accessories. Here are a few pictures from the day, enjoy!

I decided to try something new. Snorkeling was fun for a newbie.
