Pumpkin Chocolate Chip Bars

Happy new week and thanks for stopping by my blog! I am excited to share a baking post today. I have been so busy that I have neglected one of my favorite hobbies, trying new recipes!! I finally got around baking new treats this weekend. I decided to share this recipe because it's the season for pumpkins. It's fall after all and nothing is a bigger poster child for fall than pumpkins! I have never tried baking with pumpkins so I was extra excited about baking these treats. Its fairly easy to make and not time consuming. I especially loved the smell of the finished goodies aside from its taste. It is not too sweet and more on the moist side which I love. It tastes even better by the next day and its perfect with a cup of tea or coffee.
1 cup all purpose flour
2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2/3 cups brown sugar
1 cup canned pumpkin
1/4 cup milk
1/4 cup oil (I used olive oil)
1 tsp vanilla extract
1/2 cup mini chocolate chips

Topping: (optional)
4 oz cream cheese, softened
2 tablespoons butter, softened
1 cup confectioners sugar
1 tsp vanilla extract

*Calories in one bar when I cut it into 20 equal pieces, is 97 calories, 39 calories from fat. It is high in Vitamin A. 77 calories par bar without the chocolate chip.

Preheat oven to 350 degrees. In a bowl, mix all your dry ingredients (flour, cinnamon, pumpkin spice, baking powder, baking soda & salt) together and set aside. In another bowl, using a hand mixer or spatula, mix your brown sugar and oil together. Add each egg to the mix,  pumpkin, vanilla extract and milk. When well mixed, add the dry ingredients and mix together. Fold in the chocolate chips. Line a 9 by 13 baking sheet with parchment paper and pour in your mix. Bake for 15 minutes.
Put on a wire rack to cool.

Using a hand mixer, mix the butter and  cream cheese together in a bowl. Add the confectioners sugar and vanilla extract.

Once your bars have cooled down, cut into squares and add the topping. I enjoyed it with and without the topping.

Nude and Polka dots

Hi, my apologies for going MIA on the blog recently. Things have been pretty busy around me lately but I know I need to update more often:) This past Saturday I attended my last wedding of the year and I am sharing pictures of what I wore. I finally found a pair of heeled sandals in the perfect nude for my skin tone, exciting stuff! lol. They go with everything which is the best part :) They are very comfortable for 4 inch heels shoe and I would definitely recommend them. This is my second purchase from the shoe brand Schutz and they keep impressing me. They make great quality leather shoes at  reasonable prices (you can always find them on sale too.) 

I chose a simple classic look for this wedding. I paired my shoes with an  Eliza J dress (a fantastic brand that makes dresses for petite to plus sized women)  and a pair of vintage earrings. I am excited for fall weather more like fall fashion, lol and I can't wait to start mixing my warm and summer wardrobe.

Gratitude Challenge Day 3

Three things I am grateful for

I am thankful for Christ
I am thankful that I have Jesus Christ in my life. I am happy for the peace and assurance that comes with being in Christ. Its so easy to lean on your faith when you are going through tough times but its so much better when you embrace it when things are great.  It gives me great joy knowing that there is a better place (Heaven) where there will be no pain or sorry but only praises, singing, joy and laughter. I can't wait for that day! God please help me to remember the ultimate goal in this life, which is to fulfill your purpose for my life and make heaven.(Amen)

I am thankful for freedom/Peace
I think about all the unrest around the world from what is going on in the Middle East to my home country Nigeria (Boko Ham) and it makes me sad that innocent people die daily. I am thankful that I live in a place where I don't have to live in fear. I take it for granted sometimes. I am taking sometime today to pray for all the people who find themselves in these places and I pray God keeps them safe. (Amen)

I am thankful for food
Yes food! Its amazing how I don't even think twice about it because it has never been an issue. But for so many around the world it is! Everyday as I drive out the house, I always find one or two people with a sign begging for their next meal here in America and let me not begin to address what is going on in other less privileged countries around the world. Please give whenever you can and never take having for granted. 

Gratitude Challenge Day 2

Three things I am grateful today
I am grateful for my business
I enjoy baking and I am thankful to God that I am able to make an income out of what I love doing. It started as a hobby when I was a teenager and I never thought would amount into anything, super thankful for that.
I am thankful for laughter
Laughter is the bed medicine they say and I totally agree. Having different reasons to laugh today has sure made the day a whole lot easier.
I am thankful for the great weather
Today the weather is just great. Not too hot, last night's rain did some good. Woke up to a cool day and I hope it remains that way. Fall is around the corner because its usually so hot here in Atlanta even in the mornings.
 One of my all time favorite bible verse. 1 Thessalonians 5:18 "give thanks in all circumstances; for this is God's will for you in Christ Jesus."

I am sharing a picture of baked individual mini cheese cake today (recipe here) , because baking to me is like therapy. Super relaxing:)

The Gratitude Challenge

Good morning and happy hump day! I was tagged by blogger Destiny for the gratitude challenge. Here are the rules I have to follow for the next 7 DAYS.


-So for the next 7 DAYS you have to state 3 things that you are grateful for and also nominate 3 people on the first day you are challenged.
 -You have to take a picture of a simple pleasure you know something that makes you happy,

Day 1

I am grateful for Life. 
The fact that I woke up this morning is a blessing on its own and I am so thankful to God for this privilege.

I am grateful for my family.
I am thankful for a loving husband, wonderful kids, great parents,  the best siblings in the world, and the few friends who are family now. I know they are there for me no matter what and that is such a great feeling!

I am grateful for my health.
I am thankful to God for good health. The fact that I can get out of bed with no help and do the simple things is enough to be thankful for.

I get caught up in the ups and downs of life and sometimes I forget the most important things. Sometimes it takes something bad happening for me to take stock and remember what really matters in life. There is so much I want to do and I really do wish it will all just happen already, wouldn't that  be awesome, LOL. But I have to remember to be thankful to God in all things and learn to wait for HIS time and HIS lead. I just have to do my part working hard, eliminate procrastination (I am so bad with this), living by FAITH not FEAR, being diligent and I feel the  most important, just being thankful. I will end this post with my favorite bible verse of the week.. Psalm 130:5 "I wait for the Lord, my soul waits, and in his word I put my hope."
