Wedding guest look

This past weekend was packed with quite a few events for me. Between the kids and other obligations I ended up just attending two weddings, which was plenty for a weekend, lol. I had a great time at both weddings. One of the things I look forward to at weddings, is the wedding cake, more like eating of the wedding cake though. I wasn't disappointed either:) I had such a great time  too on the dance floor and it was great catching up with friends I hadn't seen in years. 

I decided to wear a long dress to one of the weddings to try something new. I don't own a lot of long formal dresses, but when I tried on this high low number, I fell in love with it! Here are a few shots taken by my hubby before we headed to the wedding. Some of the perks of having a professional photographer for a spouse , YAY!

Savannah, Georgia, Casual day look

This past weekend I went to one of my favorite small city, Savannah, Georgia, with my family. There is so much to love about Savannah, from the food, shopping, history, etc. It just embodies everything I love for a relaxed mini vacation.  We decided to do a city tour on this trip and I was shocked to find out how much history is in Savannah. From the first house in the United States to have indoor plumbing to the birth place of the Girls Scout and much more!
 
On one of our days there, this was what I wore. I am loving my gap distressed jeans these days. They are very comfortable and you can't beat gap's price point for quality jeans(got mine at a discount too).  I have been a huge fan of Gap jeans for a few years now. They have improved so much over the years with the cut and style of their jeans too. I paired my outfit with my Schutz Eirininn sandals. This is my first purchase from the brand and I wasn't disappointed. I found  this cute number for such a great deal(50% off) too. I have a fun weekend planned with two weddings I plan on attending and I can't wait for Memorial day barbecuing on Monday! What do you have planned for the weekend?

Battenberg cake

Hi and hope you are having a great Wednesday so far? Today I share with you a light sponge cake recipe known as Battenberg. It also gets its name from the arrangement of a pink and a yellow cake. I have always wanted to tried baking with Marzipan(Almond paste) so this recipe was perfect. The marzipan covers the outside of the cake. Its a fairly easy recipe and the assembling is what takes the most time. 

Ingredients
3/4 cup butter softened
1 cup sugar
3 extra large eggs lightly beaten
11/2 cups self-rising flour sifted
pinch of salt
1/2 tsp red coloring
1/2 tsp rose water or vanilla extract
1/2 tsp almond extract
1lb marzipan (Found at world cost market or any specialty baking store)
6 tbsp apricot jam
2 tbsp sugar

Directions
Preheat the oven to 350 degrees. Lightly grease a jelly roll pan. Lightly grease the base and line it with baking parchment.
Cut a strip of cardboard to fit the inside of the tin. Cover with foil, lightly grease and wedge in place. In a large bowl, beat the butter with the sugar until creamy. Add the eggs and beat well. Lightly folding the flour and salt. 
Put half the mixture in a  clean bowl and mix in the red food coloring and rose or vanilla extract until evenly tinted. Turn into one side of the tin. Mix the almond extract into the remaining batter and turn into the empty side of the tin. Smooth into the corners.
Bake for 20 minutes until risen and firm to the touch. Leave to stand for 5 minutes. Slide the blade of a knife between the cake, tin and foil strip, and turn out on to a wire rack lined with silicone paper. Remove the lining paper. Leave to go cold. 
Trim the cake and cut each slab in half lengthways so there are four equal pieces. 
In a pan, bring the jam and sugar slowly to the boil, stirring constantly. Boil for 30-60 seconds. Remove from the heat. 
To assemble the cake, brush the top of each plain cake strip with the syrup and press a pink strip on top. Brush one side of each cake stack with syrup and press them together to make a checkerboard pattern. Roll out the marzipan to an 11 inch square. Brush the cake top with syrup, and place the cake syrup-side down 1/2 inch from one edge of the marzipan. Brush the rest of the cake with syrup. Wrap the marzipan over and around the cake, smoothing it firmly with your hand, Press firmly to seal. Trim away any excess marzipan.








Quest for a great diaper bag

Diaper bags are one of those necessary evils , LOL There are a lot of variety out there at every price point imanginable.  I have always had a love hate relationship with them. With my first child I just bought one which I liked and stuck with for the first year. It was very functional but not that fashionable ( it had the typical wild print of most diaper bags.) This time around with my second child I l waited a longer time before I purchased one. I actually went without one for over six months. I used organizers for months and would just switch them as I changed purses but it left me with the only option of always carrying a big bag. I love my mini crossbody bags, so this created another problem and lets face it I want her stuff separate from mine.

I realized quickly that the best option for me would be a fashionable, light,  functional and fairly priced diaper bag that I could use and that my hubby wouldn't mind carrying either.  I wanted something I could carry by itself and would still make a fashion statement. I found a few options and finally settled for the Armani Junior Nylon Diaper bag in Navy blue. It met all my criteria and I haven't been happier!. It is so light, wipeable, perfect size( not too big, not too small) holds a lot of stuff (for the hoarders) comes with everything most diaper bags come with and super chic (clean lines and no fuss). Love the messenger style too!  I do wish it was priced lower though. I purchased mine on sale. It comes in a variety of beautiful colors too.



A cheaper option similar in shape but a bigger size priced at $120 but also can be found on sale fairly often from sites like gilt.com for $50. I love the Maclaren brand in general so is a durable very option too. It comes in a variety of colors also.

Mom's the word

One of my fondest memories of my mom growing up was of her rolling out dough on her long blue table which she used for baking. I still remember the sweet scent of her freshly made doughnuts especially. Its funny how many years later, I bake for a living, LOL. Yesterday I didn't bake up any treats after all it was mothers day(day of rest) but I did get all dressed up and asked hubby to take a few pictures of me. The weather was perfect, a far cry from the last few days which was awesome! I have owned this shift linen dress which I purchased from Ladyee boutique for over three years now and I still love it! Its an easy dress, elegant yet a sexy number and perfect day or night. I paired it with my new favorite neutral pumps, its going to be my summer staple. What is your go to item these days?
